A highly recommended recipe from Sharon!
- 1 lg box vanilla wafers, crushed
- 1 stick butter (no substitute)
- 1 lb powdered sugar (3 1/2 cups)
- 2 eggs
- 1 pt whipping cream
- 2 qts fresh strawberries
Sprinkle half of crumbs in a 13 x 9 pan (preferably glass). Cream softened butter and sugar; beat in eggs one at a time and continue beating until very creamy. Spread mixture carefully over crumbs. This is a very old recipe and raw eggs were used quite often. If you have an issue with raw eggs; bake the graham wafer egg mixture @350 degrees for 6 to 8 minutes. Chill this in the refrigerate until cold. Then, wash and hull strawberries; layer berries over butter mixture. Whip cream until quite stiff and spread over berries. Top with remaining crumbs. Cover and refrigerate 8 hours or overnight. Top each serving with a lovely berry.
